Roasted Asian Ginger Chicken
Fresh ginger, garlic, honey and soy sauce combine to create a delicious marinade and cooking sauce. Not all soy sauces are created equal! The combination of light and dark soy sauces give the sauce a wide range of flavors. Enjoy this with rice and steamed broccoli for a quick and simple meal.
3-4 lbs chicken; cut into quarters or pieces
1/2 cup honey
1/4 cup light soy sauce
1/4 cup dark soy sauce
5 cloves garlic, run through a press
1/4 cup peeled and minced fresh ginger
Coarse salt
White pepper
Season chicken pieces with salt and pepper to taste, and arrange in a shallow glass baking dish. Heat honey, soy sauces, garlic and ginger over medium-low heat to melt honey and combine flavors. Remove from heat and cool slightly. Pour over chicken pieces, turning to coat. Cover with foil and marinate in refrigerator up to four hours.
Remove chicken from refrigerator and preheat oven to 350. Bake, covered for 30 minutes. Remove foil, turn pieces and cook for another 30-45 minutes. Serve immediately, with defatted juices from pan.
