Sauteed Spinach With Tomatoes and Garlic
Balsamic and Shallot Reduction
This was delicious. Fresh salmon filet, skin-on, pan seared to a moist medium. I briefly marinated it in olive oil and balsamic vinegar, salt and pepper.
One roma tomato was chopped, then sauteed with about 1/4 cup chopped shallot and two cloves of garlic. Fresh spinach was added, wilted, and then a generous sprinking of red pepper flakes, salt and pepper.
After the salmon was cooked I deglazed the pan with the marinade and a little more balsamic vinegar. More chopped shallot was added, along with a pinch of brown sugar. Poured over all, squeeze of fresh lemon and -YUM-
